Look at our new favorite kitchen tool – the 3-in-1 Spiral Vegetable Slicer. Love, love, love it! OK, the asparagus is part of the dish. The zucchini noodles are a product of the slicer. They come out about the size of spaghetti, and when you use your favorite, veggie pasta sauce, there’s not much difference. Looks good. Tastes great!

This dish is easy. For two people we use one medium size zucchini topped with chopped asparagus, and dressed with cherry tomatoes. Use your favorite dressing. Here’s one of ours:
Ingredients: 1 cup of grapeseed oil Vegenaise, 1 Tbsp apple cider vinegar, a little distilled water, 1/2 tsp basil, 1/4 tsp garlic powder, and 1/2 tsp parsley.
Directions: Place all ingredients in a a shaker bottle or small bowl. Shake or whisk until well mixed. Drizzle over the dish to your own taste.
