bruschettaRating: 5 carrots

5 plum tomatoes, chopped
1 onion, chopped
2 cloves of garlic, minced
1 t balsamic vinegar
1/3 cup basil
lime juice (1/2 lime)
1/4 cup favorite seed oil (non-hydrogenated, please)

Blend all together and refrigerate to allow flavor to marinate together before using.

Use to make sandwiches, toppings for your favorite bread, portobello mushroom sauce, stuffed celery sticks, or use as a dip. Delicious!
