Mashed Potato Spinach Patties

Rated: 4.5 carrots, cooked
Yields 10 patties


4 c red potatoes, cubed with skin on
1 1/2 c finely chopped spinach
1/2 c finely chopped onion
2 minced clove garlic
2 T Earth Balance or coconut oil
Himalayan salt to taste
white or black pepper

Wash and cube potatoes, cook until tender. Add butter or oil and finely mash potatoes. Mix in spinach, onion, garlic, salt and pepper.

Form into patties and flatten between your palms.

Preheat oil in large sate pan.

Gently place the patties in pan. Be careful not to overcrowd.

Cook about 5 minutes on both sides or until golden brown..

Top with favorite toppings.

Great to freeze. Be sure to separate with parchment paper or freeze individually. Thaw in refrigerator and in 350 degree oven.
