Veggie Wrap

Veggie WrapRated: 5 carrots, mostly raw
Serves 4


2 c chopped zucchini
1/2 c chopped onion
1 c chopped tomatoes
1/3 c chopped peeled cucumber
1/3 c chopped red pepper
1/2 c chopped jicama
1/2 c chopped mushrooms of your choice. Crimini, baby bella,are great choices.
2 T turmeric
1/2 chopped jalapeno pepper (optional)
kale, collard, napa cabbage, romaine or your favorite green leaf.

Lightly sauté mushrooms, onions and tomatoes in a small amount of water no more than a couple minutes. Add to veggie mix. Switch out your veggies. Use any veggie you like. Make it different each time. We even use water chestnuts and bean sprouts occasionally.

Spread your favorite humus, chipotle mayo or favorite sauce on your favorite green leaf. Top with veggies. Roll up leaf. Enjoy!
