Watermelon Tomato Gazpacho

Watermelon Tomato GazpachoRated: 5 carrots, raw, sweet
Serves 4


4 medium tomatoes, chopped
4 c diced seedless watermelon
1 cucumber, peeled and seeded
1 yellow bell pepper, chopped
1 medium shallot, chopped
1/3 c basil and mint, loosely packed
salt and pepper to taste
1/3 c extra virgin olive oil
3 T champagne vinegar

Place all ingredients except oil and vinegar in large bowl. Stir in oil and vinegar. Enjoy!


Place barely chopped veggies in Vitamix and pulse a few minutes. Enjoy!
