Pulp Cracker Salad

5 Carrots

3 /4 cups pulp crackers (or your favorite cracker or chips)
1/4 cup fresh lemon juice
1 teaspoon lemon zest
1/4 cup extra-virgin olive oil
6 cups spinach or kale torn into bite-sized pieces
1 cup chopped fresh flat-leaf parsley
1/4 cup sliced onions
1/2 cup chopped fresh mint leaves
1 English cucumber, cored, halved lengthwise and thinly sliced
1 pint grape tomatoes, halved

Mix together the lemon juice, zest, oil, salt and pepper.

Toss the spinach or kale, parsley, onions, mint, cucumber, and tomatoes together in a large bowl.

Right before serving, add pulp crackers or cracker of your choice and dressing to the salad. Toss well.
