Rated: 5 carrots, raw
1 cup water
2 cucumber with or without peeling
1 t cumin
2 clove garlic
juice of 1 lemon
Himalayan salt to taste
To make this cold soup, cut cucumber into small pieces and place all ingredients in blender or food processor. Blend until creamy. Use Vitamix for creamier soup. Use food processor for chunkier soup.
Top with diced tomatoes, red onions and cilantro. Or top with shredded carrots, diced colorful bell peppers. Or top with any veggie you like. Serve with or without chips.
Place in container and store in refrigerator. Serve as soup, sauce over veggie noodles or dip.
If you omit the water, you can use it as a spread for your veggie wraps or sandwiches.
